"Pumpkin soup"
The classic in October!
Ingredients for 4 persons:
1 Hokkaido pumpkin
2 carrots
2 potatoes
1 onion
3 tbsp oil
salt and pepper
2 tsp broth
200g minced meat
4 tbsp sour cream
chives
Remove the seeds from the Hokkaido pumpkin, do not peel it, and dice it. Peel and dice potatoes, carrots and onions. Sauté all ingredients in oil and deglaze with 1 liter of water.
Add spices and stock and simmer for 15 minutes, then puree. Fry the mince and fold in the sour cream and chive rolls. If necessary, refine with pumpkin seeds and pumpkin seed oil.
"Pumpkin gratin"
Delicious out of the oven!
1kg diced pumpkin flesh
2 leeks, sliced
200g diced bacon
2 cups of sour cream
salt and pepper
Layer pumpkin flesh and leek in a baking dish.
Mix bacon, sour cream, salt and pepper
and pour over the pumpkin and leek mixture.
At 175⁰Bake for about 45 minutes.
"Pumpkin Mediterranean style"

350g pasta
150g smoked ham
Parmesan cheese
Cut pumpkin into bite-sized pieces and spread on a greased baking tray.
Spread some salt, pepper, pesto and/or your favorite herbs over it. the pumpkin at 200⁰Bake for 20-30 minutes. In the meantime, cook the pasta until al dente. Dice the ham and mix with the noodles and pumpkin. Refine with parmesan.
"Pumpkin vegetable"
Delicious from the pan!
600g diced pumpkin
300g onions
1 cup of cream
1 tbsp vinegar
rapeseed oil
Salt
Slice the onions and sauté in oil.
Then add the pumpkin.
Deglaze with the cream and cook until al dente, about 10 minutes.
Season with vinegar and salt.
“Pumpkin fries”
Fries with a difference, also very tasty!
1kg pumpkin flesh (variety of your choice)
1 teaspoon paprika powder
2 tbsp olive oil
salt and pepper
Cut pumpkin flesh into chip sticks.
Mix olive oil, paprika powder, salt and pepper and mix with the pumpkin.
Place the french fries on a baking tray lined with baking paper and bake at approx. 200-220⁰Bake for 25 minutes.
